Ingredients
  

FOR THE VANILLA CUPCAKES
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
FOR THE BUTTERCREAM FROSTING
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 2 teaspoons vanilla extract
  • A pinch of salt
  • Yellow food coloring
FOR DECORATING
  • Mini chocolate chips or candy eyes (for the eyes)
  • Orange M&M’s or jelly beans (for the beak)
  • Optional: Small star sprinkles or piped buttercream “feathers” for added details

Method
 

  1. Preheat oven to 350°F (175°C). Whisk flour, baking powder, and salt. Beat butter and sugar until fluffy. Add eggs and vanilla.
  2. Gradually add dry ingredients alternating with milk, mixing until just combined.
  3. Fill liners ¾ full. Bake for 18-20 minutes. Cool completely.
  4. Beat butter until creamy. Add powdered sugar, cream, vanilla, and salt. Mix in yellow food coloring.
  5. Pipe a large swirl for the body, then a smaller swirl for the head.
  6. Place chocolate chips for eyes and an M&M for the beak. Add optional details.
