Method
- Preheat oven to 350°F (180°C). Grease and flour an 8-inch round cake tin.
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time.
- Sift in the flour, baking powder, and cinnamon. Gently fold into the mixture.
- Add the milk and chopped apples. Mix until just combined.
- Pour the batter into the prepared cake tin and sprinkle with demerara sugar.
- Bake for 45-55 minutes, or until a skewer inserted into the center comes out clean.
- Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a richer flavor, consider adding a tablespoon of Irish whiskey to the batter.
