Ingredients
  

Cake Ingredients
  • 4 oz unsalted butter softened
  • 6 oz caster sugar
  • 2 large eggs
  • 8 oz self-raising flour
  • 1 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 2 tbsp milk
  • 2 medium apples peeled, cored and chopped
Topping
  • 2 tbsp demerara sugar for topping

Method
 

  1. Preheat oven to 350°F (180°C). Grease and flour an 8-inch round cake tin.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time.
  4. Sift in the flour, baking powder, and cinnamon. Gently fold into the mixture.
  5. Add the milk and chopped apples. Mix until just combined.
  6. Pour the batter into the prepared cake tin and sprinkle with demerara sugar.
  7. Bake for 45-55 minutes, or until a skewer inserted into the center comes out clean.
  8. Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a richer flavor, consider adding a tablespoon of Irish whiskey to the batter.
