  • 2 cups powdered sugar
  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter softened
  • 1 teaspoon vanilla extract
Coating
  • 1 cup shredded coconut
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup cocoa powder for rolling

Method
 

  1. Combine powdered sugar, peanut butter, butter, and vanilla. Mix until smooth.
  2. Stir in coconut and cinnamon until evenly distributed.
  3. Shape mixture into 1-inch potato-shaped balls.
  4. Roll each ball in cocoa powder to coat completely.
  5. Place candies on parchment-lined baking sheet.
  6. Refrigerate for 30 minutes to firm up before serving.

For a smoother candy, use a high-quality creamy peanut butter.
