Method
- Preheat oven to 350°F (175°C).
- Cream butter, 1/2 cup granulated sugar, and powdered sugar until fluffy.
- Stir in vanilla extract.
- Whisk together flour and salt in a separate bowl.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Press dough evenly into an ungreased 9x13 inch baking pan.
- Bake for 20-25 minutes, or until lightly golden.
- Whisk eggs, 1 1/2 cups granulated sugar, flour, baking powder, and salt.
- Stir in lemon juice and lemon zest.
- Pour lemon filling over the hot crust.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Let cool completely in the pan before cutting into bars.
- Dust with powdered sugar before serving.
Notes
For a more intense lemon flavor, add an extra tablespoon of lemon zest to the filling.
