Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
Filling
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup lemon juice freshly squeezed
  • 2 tablespoons lemon zest
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter, 1/2 cup granulated sugar, and powdered sugar until fluffy.
  3. Stir in vanilla extract.
  4. Whisk together flour and salt in a separate bowl.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Press dough evenly into an ungreased 9x13 inch baking pan.
  7. Bake for 20-25 minutes, or until lightly golden.
  8. Whisk eggs, 1 1/2 cups granulated sugar, flour, baking powder, and salt.
  9. Stir in lemon juice and lemon zest.
  10. Pour lemon filling over the hot crust.
  11. Bake for an additional 20-25 minutes, or until the filling is set.
  12. Let cool completely in the pan before cutting into bars.
  13. Dust with powdered sugar before serving.

Notes

For a more intense lemon flavor, add an extra tablespoon of lemon zest to the filling.
