  • 1 box lemon cake mix (15.25 oz)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest optional
  • Powdered sugar for dusting (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Combine cake mix, oil, eggs, lemon juice, and zest (if using). Mix well.
  3. Drop by rounded tablespoons onto ungreased baking sheets.
  4. Bake for 8-10 minutes, or until edges are lightly golden.
  5. Cool on baking sheets before transferring to a wire rack.
  6. Dust with powdered sugar, if desired.

Notes

For a more intense lemon flavor, add more lemon zest.
