Method
- Cream butter and sugar until light and fluffy.
- Add eggs, vanilla, lemon zest, and lemon juice; mix well.
- Whisk flour, baking powder, salt, and baking soda; add to wet ingredients until just combined.
- Chill dough for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Place granulated and powdered sugar in separate bowls.
- Roll dough into balls, then in granulated sugar, then in powdered sugar.
- Place on baking sheet and bake for 10-12 minutes.
- Cool on baking sheet, then transfer to wire rack.
Notes
For a more intense lemon flavor, add a few drops of lemon extract to the dough.
