Lemon Curd Shortbread Cookies

Delightfully buttery shortbread cookies filled with tangy lemon curd. These cookies are perfect for afternoon tea or a special treat.

Ingredients
  

Shortbread Dough
  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
Lemon Curd Filling
  • 1/2 cup lemon curd store-bought or homemade
Garnish
  • powdered sugar for dusting (optional)

Method
 

  1. Preheat oven to 325°F (160°C).
  2. Cream butter and powdered sugar until fluffy.
  3. Add salt and mix well.
  4. Gradually add flour, mix until just combined.
  5. Divide dough, roll out to 1/4 inch thickness.
  6. Cut out cookies and place on baking sheet.
  7. Repeat with remaining dough.
  8. Bake for 12-15 minutes until golden brown.
  9. Cool on baking sheets, then transfer to wire rack.
  10. Spread lemon curd on half of the cookies.
  11. Top with remaining cookies to create sandwiches.
  12. Dust with powdered sugar, if desired.
  13. Store in an airtight container.

Notes

For a richer flavor, use European-style butter.
