Method
- Preheat oven to 325°F (160°C).
- Cream butter and powdered sugar until fluffy.
- Add salt and mix well.
- Gradually add flour, mix until just combined.
- Divide dough, roll out to 1/4 inch thickness.
- Cut out cookies and place on baking sheet.
- Repeat with remaining dough.
- Bake for 12-15 minutes until golden brown.
- Cool on baking sheets, then transfer to wire rack.
- Spread lemon curd on half of the cookies.
- Top with remaining cookies to create sandwiches.
- Dust with powdered sugar, if desired.
- Store in an airtight container.
Notes
For a richer flavor, use European-style butter.
