  • 1 cup powdered sugar for coating

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until fluffy.
  3. Beat in egg, lemon juice, and zest.
  4. Whisk flour, baking soda, and salt.
  5. Gradually add dry to wet ingredients; mix until combined.
  6. Roll dough into 1-inch balls.
  7. Roll each ball in powdered sugar.
  8. Place cookies on an ungreased baking sheet.
  9. Bake for 8-10 minutes until golden.
  10. Cool on baking sheet before transferring to a wire rack.

Notes

For a tangier flavor, add a bit more lemon zest. Store in an airtight container for up to 3 days.
