  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 1 large egg
  • 1 teaspoon lemon extract
  • 1 lemon zest of 1 lemon
  • 3 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Method
 

  1. Cream butter and sugar until light and fluffy.
  2. Beat in egg, lemon extract, and lemon zest.
  3. Whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients, mix until combined.
  5. Divide dough, flatten, wrap, and chill for 1 hour.
  6. Preheat oven to 375°F (190°C). Line baking sheets.
  7. Roll out dough to 1/4 inch thickness.
  8. Cut out cookies and place on baking sheets.
  9. Bake for 8-10 minutes, until edges are golden.
  10. Cool on baking sheets, then transfer to a wire rack.
  11. Dust with powdered sugar before serving.
