  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • granulated sugar for coating

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until fluffy.
  3. Beat in eggs, then lemon juice, zest, and vanilla.
  4. Whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet, mix until combined.
  6. Roll dough into 1-inch balls.
  7. Roll each ball in sugar to coat.
  8. Place cookies on baking sheets, leaving space.
  9. Bake for 8-10 minutes, until golden.
  10. Cool on sheets, then transfer to a wire rack.

Notes

For a tangier flavor, add a bit more lemon zest. Store in an airtight container for up to a week.
