  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a cupcake pan.
  2. Cream butter and sugar. Add eggs one at a time.
  3. Whisk flour, baking powder, baking soda, and salt. Add to butter mixture alternating with buttermilk. Stir in lemon zest and vanilla.
  4. Divide batter among cupcake liners. Bake for 18-20 minutes.
  5. Cool completely before frosting. Enjoy!

Notes

For an extra burst of lemon flavor, add a teaspoon of lemon extract to the batter.
