Method
- Preheat oven to 350°F (175°C) and line a cupcake pan.
- Cream butter and sugar. Add eggs one at a time.
- Whisk flour, baking powder, baking soda, and salt. Add to butter mixture alternating with buttermilk. Stir in lemon zest and vanilla.
- Divide batter among cupcake liners. Bake for 18-20 minutes.
- Cool completely before frosting. Enjoy!
Notes
For an extra burst of lemon flavor, add a teaspoon of lemon extract to the batter.
