Shamrock Shake Cake

Ingredients
  

Cake
  • 2 cups flour
  • 1/4 cup cornstarch
  • 4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 3/4 cups sugar
  • 5 egg whites
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 1/2 sticks butter, cut into cubes
Frosting
  • 2 1/2 sticks butter, softened
  • 1/2 teaspoon table salt
  • 4 cups powdered sugar
  • 2-4 tablespoons cream, as needed
  • 1 teaspoon mint extract or oil
Decoration
  • green food coloring
  • white chocolate
  • maraschino cherries
  • gold luster stars

Method
 

  1. Preheat oven to 350 degrees F and grease and flour 3 6-inch round pans.
  2. Microwave butter until slightly melted.
  3. Mix flour, cornstarch, baking powder, salt, and sugar.
  4. Whisk milk, vanilla extract, and egg whites.
  5. Add melty butter to flour mixture gradually.
  6. Stream in milk and egg mixture; beat until smooth.
  7. Divide into prepared pans.
  8. Bake for 16-20 minutes.
  9. Allow to cool completely.
  10. Beat softened butter until fluffy.
  11. Add salt and sugar; add cream if needed.
  12. Add the mint extract.
  13. Divide batter; add green food coloring to one bowl.
  14. Place layer on stand; top with frosting.
  15. Repeat until all layers are stacked.
  16. Add green frosting to the bottom half.
  17. Add white frosting to the upper half.
  18. Blend and smooth the frostings together.
  19. Chill in the fridge.
  20. Melt white chocolate; pour over edges.
  21. Pipe poofs on top with extra white frosting.
  22. Place a cherry on each poof and add gold stars.

Notes

For a richer flavor, use brown butter in the cake batter.
