Pie
  • 1 graham cracker pie crust 9-inch
Filling
  • 3.4 oz instant vanilla pudding mix
  • 1.5 cups milk
  • 1 cup heavy cream
  • 0.5 teaspoon peppermint extract
  • 5-6 drops green food coloring or more, to desired color
Topping (optional)
  • Whipped cream for topping
  • Chocolate shavings for topping

Method
 

  1. Whisk pudding mix and milk until smooth. Let set for 5 minutes.
  2. Whip heavy cream until stiff peaks form.
  3. Fold whipped cream into pudding mixture.
  4. Stir in peppermint extract and food coloring.
  5. Pour mixture into pie crust.
  6. Refrigerate for at least 2 hours, or until set.
  7. Garnish with whipped cream and chocolate shavings, if desired.

Notes

For a richer flavor, use whole milk and high-quality heavy cream.
