  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • Red food coloring optional
  • Chocolate chips or sprinkles optional
  • Whipped cream or berries optional
  • Cooking spray or butter for greasing

Method
 

  1. Whisk together flour, sugar, baking powder, and salt.
  2. Whisk together egg, milk, melted butter, and vanilla extract.
  3. Add red food coloring to wet ingredients for pink pancakes (optional).
  4. Pour wet into dry ingredients; stir until just combined.
  5. Heat a lightly oiled griddle over medium heat.
  6. Pour 1/4 cup batter onto the hot griddle for each pancake.
  7. Sprinkle chocolate chips or sprinkles on top (optional).
  8. Cook 2-3 minutes per side, until golden brown.
  9. Serve with whipped cream, berries, or your favorite toppings.

Notes

For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
