Ingredients
  

For the Cookies:
  • 3 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For the Royal Icing:
  • 4 cups powdered sugar
  • 3 tablespoons meringue powder
  • 5-7 tablespoons warm water
  • Gel food coloring (various spring colors)

Method
 

  1. Cream butter and sugar until fluffy. Beat in egg and vanilla.
  2. Whisk flour, baking powder, and salt. Gradually add to wet ingredients.
  3. Divide dough, chill for 1 hour.
  4. Preheat oven to 350°F (175°C). Line baking sheets.
  5. Roll out dough, cut shapes, bake for 8-10 minutes. Cool completely.
  6. Combine powdered sugar and meringue powder. Add water until smooth.
  7. Divide icing, tint with food coloring, transfer to piping bags.
  8. Outline cookies, let dry. Flood with thinned icing, smooth, let dry.
  9. Add details with icing. Let dry completely.

Notes

For best results, use gel food coloring for vibrant colors and allow ample drying time for the royal icing.
